A fantastic alternative to eating out at expensive restaurants, create your favourite Japanese katsu curries at home in the comfort of your kitchen. Coat big slices of sweet potato in panko breadcrumbs, shallow fry or bake on a tray in the oven. Heat through Bay’s Kitchen Katsu Curry Stir-In Sauce and pour it on top of the sweet potatoes for an amazing East Asian curry!

Cooking Instructions

For a sweet potato katsu curry, preheat the oven to 200°C /220°C/gas mark 7.

Slice a big sweet potato into 1cm thick slices, dip in flour, then vegan milk, and finally panko breadcrumbs.

Bake on a lined baking tray for 10 - 15 mins on each side until golden.

Heat Bay’s Kitchen’s Katsu Curry Stir-In Sauce in a pan then split the potatoes between 2 plates, top with the sauce and serve with rice and top with some freshly chopped coriander.
