Ingredients
- 125g All-Purpose Flour
- 1 tsp Baking Powder
- ¼ tsp Salt
- 60g Vegan Butter
- 85g Granulated Sugar
- 1 tsp Vanilla Extract
- 3 tbsp Dark Rum
- 2 Baking Apples
- 2 tsp Egg Replacer
Directions
- Preheat the oven to 180°C.
- Grease a regular cake tin and line the bottom with baking parchment.
- Peel and chop the baking apples into small cubes. Set aside.
- Mix together the sugar and butter until light and fluffy.
- In a separate bowl, combine 4 tablespoons of water with the 2 tsp of the Free & Easy egg replacer.
- Mix this into the butter and sugar mixture a little at a time.
- Add the vanilla extract and the dark rum. Mix until combined.
- Stir the chopped apples into the cake mix until distributed evenly.
- Use a spatula to transfer your mixture into the pre-prepared tin.
- Sprinkle an additional tablespoon of sugar over the top of the cake mixture.
- Bake for 30-40 minutes, or until the cake is golden brown and a skewer inserted into the centre comes out clean.
- Allow to cool.
- Remove the cake from the tin and serve on its own or with a dollop of Oatly Whippable Cream.
Classic Carrot Cake

Ingredients
Cake Batter:
- 250g All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Salt
- 2 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- 255g Grated Carrot
- 300g Brown Sugar
- 2 Flax Seed Eggs (2 tbsp Ground Flaxseed with 6 tbsp Water)
- 120ml Canola Oil
- 1 tbsp Apple Cider Vinegar
- 100g Chopped Walnuts
Icing:
- 100g Vegan Cream Cheese
- 400g Icing Sugar
- 3 tbsp Lemon Juice
Directions
- Preheat the oven to 180°C.
- Grease a regular cake tin and line the bottom with baking parchment.
- Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a large mixing bowl. Add the grated carrot and brown sugar.
- In a separate bowl, mix the ground flax seeds with water. Leave to rest for a few minutes to create your flax seed eggs.
- While your flax seed eggs are resting, in another bowl, mix the canola oil with the apple cider vinegar. Then add your flax seed eggs.
- Add this mixture to the larger bowl with the carrots and flour and let the batter rest for a few minutes. Then, mix well.
- If your batter is too dry, add a splash of non-dairy milk.
- Transfer your mixture to the greased tin and bake for 30 minutes, or until a skewer inserted into the centre comes out clean.
- While your cake is cooling, prepare the icing.
- Allow the cream cheese to soften, then mix with the icing sugar and lemon juice with a whisk until light and creamy.
- When your cake is cool, add the icing, sprinkle with walnuts and serve!
Easy Vegan Brownies
